The Energy Ball Recipe

Gluten-free | No powders | All-natural

Makes 20 balls approx. golf ball size

 

Ingredients:

    •    65g raw almonds (no husk)

    •    65g raw cashews

    •    125g soft Medjool dates (pitted)

    •    75g natural peanut butter (or almond butter)

    •    50g shelled hemp seeds (hemp hearts)

    •    25g chia seeds

    •    25g coconut flour

    •    1 tbsp raw cacao powder

    •    ½ tsp vanilla extract

    •    Pinch of sea salt

    •    1 tbsp maple syrup (optional, to taste)

    •    2–3 tbsp almond milk (only if needed for texture)

 

Optional finishes:

    •    Chopped dark chocolate

    •    Crushed pistachios, shredded coconut, or cacao powder for rolling.

 

Instructions:

    1.    Blitz almonds and cashews in a food processor until finely chopped but not powdered.

    2.    Add the dates and blitz again until the mix starts to stick together.

    3.    Add all remaining ingredients (except almond milk) and blitz into a thick dough.

    4.    If dry or crumbly, add almond milk 1 tbsp at a time until rollable.

    5.    Roll into 20 balls (about 30g each).

    6.    Roll in toppings if using.

    7.    Chill for at least 1 hour to firm up. Store in fridge for up to 2 weeks.
